Dining outside on a warm summer night is one of my favorite parts of the season — from picnics at the park to big backyard barbecue gatherings. Many memories are made as we gather around a table to enjoy a meal alfresco.
Unfortunately, much of what we put out on the grill isn’t so good for us. If you’re looking to host an outdoor barbecue with healthier options than the typical hot dogs, hamburgers, and ribs – check out the tasty yet healthy suggestions.
Marinated grilled chicken or tofu
Grilled chicken or tofu is a healthy choice. All you need is a great marinade, and you’re all set. Sometimes, just a simple herb rub with garlic, cumin, Italian seasoning, salt and pepper is enough to do the trick. There are so many different marinades to choose from so you won’t get bored. Be sure to check the ingredient list and avoid lots of sugar or high fructose corn syrup, colors and preservatives.
Grilled veggie sandwiches
Grilled vegetables are one of our family favorites. Grab Portobello mushrooms, zucchini, eggplant, and bell peppers and roast them over the open flame. Mist them with a bit of olive oil to keep them from sticking without making them soggy. Then, add a whole grain bun or wrap or use a collard green or romaine lettuce leaf for a low carb option and a satisfying meal.
Turkey or Veggie Burgers
Instead of grass-fed ground beef, make your burgers with organic ground turkey. Mix in some mustard, thyme, garlic, salt and pepper and you’ll have a delicious burger. Or you can opt for a veggie burger if you want a meat-free option. Homemade black bean burgers are a big hit in my house!
Fajita kabobs
Everyone loves food that looks pretty – and a skewer of marinated peppers and onions fits the bill. For a vegetarian option, add some baby bella mushrooms or some shrimp for the pescatarians. Spice it up with some fajita seasoning, and you’ll have a yummy barbecue dish that’s full of flavor and kind to your health.
Grilled watermelon
Watermelon is a summer barbecue staple. It’s packed with nutrients and tossing slices of it on the grill is a game-changer for the palate. You won’t need a sugary dessert after this treat!
Grilled fish
Fresh fish on the grill evokes images of an island vacation. No matter where you live, you can make your own version of paradise. My favorite is to add lots of herbs and veggies, like asparagus, wrap it in a foil packet and add to the grill. You can choose your favorite fish, but ideally wild fish is best. Just ask the fish monger which is the freshest and try it!
Cauliflower steaks on the grill
Cauliflower…is there anything it can’t do? Slice it into thick “steaks”, marinate and grill it. Like Portobello mushrooms, it is more hearty and a great option for your vegetarian guests. A minute before you take it off the grill, grate a bit of Pecorino Romano cheese on top for a salty, cheesy taste!
Shrimp Skewers
And finally, you can’t go wrong with shrimp on the barbie for a delicious and healthful option. Marinate them, skewer them, put them on the grill, and enjoy!
