26 May Benefits of Lemons
Lemons are one of my favorite fruits. They are so versatile. Use them to dress your salads and vegetables, to flavor your water, to add zing to your seafood and to reduce the bitterness in green juices. The juice from one lemon has 1/3 of the recommended daily allowance of vitamin C, which is great for boosting your immune system and it’s also a good source of potassium and folate.
Lemons contain citric acid which aids in digestion and can help dissolve kidney stones. (1) They also contain a natural antioxidant, ascorbic acid, which helps to prevent scurvy.
Did you know the lemon peel has even more nutrients and vitamins than the lemon juice?It is a good source of vitamins B6 & C, calcium and dietary fiber. Just 1 ounce of lemon peel has 3 grams of fiber – more than in a Nature Valley granola bar! (2)
So, the next time you juice a lemon, save the peel and use it in salads, juices and baked goods. One of my favorites is to sprinkle lemon zest (peel) over grilled asparagus. Note: Whenever possible, use organic lemons if you are eating the peel. Wash the lemon peel before eating it as it may contain pesticides or insecticides or may have a wax coating to protect it during shipping.
