Massaged Kale with Balsamic Vinagrette

PREP TIME:

10 minutes

PREP NOTES:

Kale – Use 1 large bunch of kale and follow the instructions below.

One of the secrets to a delicious kale salad, is massaging the kale prior to eating.

The process is as follows: Wash and dry the kale. Then, remove the stems. Cut into bit sized pieces and massage with 1-2 tablespoons of olive oil. Add a light sprinkle of salt and set aside. This can be done the night before as the kale can stand up to the oil overnight

INGREDIENTS:

  • Balsamic Mustard Dressing

¼ cup Balsamic vinegar (try to find the one with the least amount of ingredients)

1/8 cup Extra virgin olive oil

    1/8 cup Water

    1 tablespoon Dijon mustard

1 squirt raw honey (approximately 1 teaspoon)

1 teaspoon of your favorite seasoning mix (Savory Spices, Penzeys, 21 Salute from trader joes, etc.)

    Salt, as needed

Optional: Add dried cranberries, raw pumpkin seeds, green apple, goat cheese, etc.

DIRECTIONS:

  • Add all ingredients to a jar and shake vigorously. Ideally, let sit for an hour in the fridge for the flavors to blend together. Shake again before pouring on the salad.

Optional: Add dried cranberries, raw pumpkin seeds, green apple, goat cheese, etc.

NOTES:

To change up the dressing, try different vinegars, infused oils, different spices, etc. Don’t be afraid to experiment in the kitchen. Some of my best recipes are created this way!
