Pumpkin Hummus

YIELDS:

12  servings

INGREDIENTS:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup of pumpkin (canned or freshly roasted and cooled)
  • 3 tbsp tahini sauce
  • 2 tbsp lemon juice
  • 1 clove of garlic, minced
  • 1 tsp cumin powder
  • Salt and pepper, to taste
  • Extra virgin olive oil, for drizzling (optional)
  • Paprika, for garnish (optional)

DIRECTIONS:

  1. Add all ingredients except olive oil and paprika into a food processor or blender.

  2. Blend until smooth, stopping to scrape down the sides as necessary.

  3. Taste and adjust seasoning as necessary.

  4. Serve with a drizzle of olive oil and a sprinkle of paprika, if desired.
