Combine chocolate and coconut oil and meltslowly on the stove, ideally in a double boiler. To make your own double boiler, place bowl over a pot of lightly simmering water and stir continuously.
Mix cocoa powder and peppermint extract into coconut cream in separate bowl.
Once chocolate mixture is melted, stir in coconut cream mixture, and continue to melt until all ingredients are melted and well mixed.
Pour chocolate mixture into an lightly greased 8×8 baking pan.
Place in the refrigerator for at least 1 hour until hardened. Cut into small squares and enjoy!
