Chocolate Peanut Butter Chia Pudding

INGREDIENTS:

  • 2/3 cup of non-dairy milk
  • 2 tablespoons of chia seeds
  • 2 tablespoons of chocolate collagen powder (optional for added protein)
  • 1 tablespoon peanut or almond butter (warm slightly for easier mixing)
  • 2-3 teaspoons raw cacao (or 100% cocoa powder)
  • 1/4 tsp natural vanilla
  • 1 tsp natural sweetener to taste: honey, maple syrup, or 3-4 drops of liquid stevia (OPTIONAL)
  • pinch of cinnamon

DIRECTIONS:

  1. Mix together all ingredients with a whisk. Be sure to break up all the clumps of cacao powder and nut butter.
  2. Pour into a small mason jar and refrigerate for at least 30 minutes.
  3. Stir and enjoy with raspberries, blueberries, shredded coconut, cacao nibs, sliced nuts or gluten-free granola.
