Classic Hummus

YIELDS:

INGREDIENTS:

  • 1 (15-ounce) can chickpeas
  • Juice from one large lemon (1/4 cup)
  • 1/4 cup sunbutter (or tahini)
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon ground cumin
  • 1/8 tsp garlic powder (or one garlic clove, pressed)
  • 1/8 smoked paprika
  • 1/2 tsp Himalayan or sea salt (or adjust to your preference)
  • 2 to 3 tablespoons (30 to 45 ml) water

DIRECTIONS:

  1. Combine all ingredients in a food processor or high-speed blender for 1 minute.
  2. Scrape the sides and bottom of the bowl or blender and process or blend for 30 more seconds.
  3. Garnish with a sprinkle of paprika and parsley to serve.
