High Protein Peanut Butter Blondies

INGREDIENTS:

  • 1 cup natural peanut butter
  • 1 large egg
  • 3 tbsp Greek yogurt
  • 1⁄4 cup vanilla protein powder
  • 1⁄4 cup pure maple syrup or raw honey
  • 1 tsp vanilla extract
  • 1⁄2 tsp baking soda
  • 1 tbsp coconut oil
  • 1⁄2 cup dark chocolate chips (or mix 1⁄4 cup chips + 2 tbsp chopped nuts)
  • Coconut oil for greasing pan

DIRECTIONS:

  1. Preheat the oven to 350°F and lightly grease an 8×8-inch pan with coconut oil.
  2. In a large bowl, combine the peanut butter, egg, Greek yogurt, maple syrup, vanilla, baking
    soda, protein powder, and coconut oil. Stir until smooth and fully combined.
  3. Fold in the chocolate chips (and/or chopped nuts) until evenly distributed.
  4. Spread the mixture evenly in the prepared pan. Note: this batter will not expand, so make
    sure it fills the pan evenly.
  5. Bake for 20–25 minutes, or until the top is lightly golden and the center is set but not overly
    soft.
  6. Remove from the oven and let the bars cool completely (at least 15 minutes) before slicing
    into 12 squares.
  7. Store in an airtight container in the fridge for up to a week, or freeze for longer storage.
