Peanut Butter Blondies – Gluten Free

INGREDIENTS:

  • 1 cup of natural peanut butter
  • 1 whole egg
  • 1/4 cup of pure maple syrup or raw honey
  • 1 tsp. of vanilla
  • 1/2 tsp. of baking soda
  • 1 tbsn coconut oil
  • 1/2 cup of dark chocolate chips (or raisins or nuts)
  • Coconut oil to grease the pan

DIRECTIONS:

  1. Preheat oven to 350
  2. Grease an 8×8 pan
  3. Combine all ingredients except the chocolate chips.
  4. Fold in the chocolate chips when all the other ingredietns are well mixed together.
  5. Spread mixture evenly in the pan, making sure to cover the whole pan – as this mixture will not expand!
  6. Bake for 18-22 minutes or until the top is lightly brown.
  7. Cut in 25 pieces and enjoy!  It’s hard to believe they are flourless. They are so delicous.

NOTES:

You can make this recipe with almond butter, sun butter, cashew butter, etc.  Feel free to experiment!
