Ginger Garlic Salmon

YIELDS:

INGREDIENTS:

  • 1/4 cup water
  • 1 tablespoon coconut oil – liquefied (or olive oil if coconut is not available)
  • 1 tablespoon fresh grated ginger
  • 1 tablespoons umeboshi plum vinegar
  • 1 clove garlic
  • 4 4 ounce wild salmon filets

DIRECTIONS:

  1. Lightly whisk water, oil, ginger, vinegar and garlic to make the marinade.
  2. Place fish skin side down in baking dish, cover with marinade and let sit for 30 minutes in fridge.
  3. Place fish under broiler for 6-8 minutes for medium rare (or 8-10 minutes for medium/well). Baste once or twice.
  4. Serve fish over a bed of wilted greens and use remaining marinade as a sauce.

NOTES:

This recipe can be used for any wild fish fillets, although cooking times will change based upon the thickness of the fillets.
