Gluten Free Pancakes

INGREDIENTS:

  • 1 1/3 Gluten Free All Purpose Baking Flour
  • ¾ tsp Baking Powder
  • ¼ tsp Baking Soda
  • 3/4 cup of water (or can use non-dairy milk)
  • 6-10 drops liquid Stevia
  • 2 tsp Vanilla Extract
  • 1 Tbsn coconut oil (melted)
  • 2 eggs (lightly beaten)

DIRECTIONS:

  1. Combine all dry ingredients in a large bowl.
  2. Lightly beat 2 eggs and add in coconut oil, vanilla extract, water and stevia (or your preferred sweetener)
  3. Fold liquid ingredients into the dry ingredients and mix together, don’t over mix, but try and remove the lumps!
  4. Use 1/4 or 1/3 cup measure to scoop out batter onto preheated griddle. (I used coconut oil to prepare my griddle.)
  5. Turn pancakes over when they bubble and they are no longer liquid on top (2-3 minutes/side)
  6. Serve with maple syrup, fresh fruit, raw honey, etc. and enjoy!
