Flourless Peanut Butter Cookies: Gluten-free, Dairy-free

YIELDS:

20 cookies

INGREDIENTS:

    • 2 cups of peanut butter (organic or natural, if possible)
    • 1/4 cup maple syrup (can use organic cane sugar)
    • 1 scoop organic, plant based vanilla protein powder (Orgain is what we used)
    • 1 egg
    • ¼ cup chocolate chips, optional (we used Enjoy Life)

DIRECTIONS:

  1. Preheat oven to 350 F
  2. Grease cookie sheet or use silicon baking sheet or parchment paper
  3. Combine all ingredients except the chocolate chips.
  4. Fold in the chocolate chips when all the other ingredients are well mixed together
  5. Place 1 rounded tablespoon of cookie dough on the cookie sheet, about 2 inches apart. Flatten each cookie with fork.
  6. Bake for 10-12 minutes (10 softer, 12 for crispier)
  7. Let cool for 5 minutes before removing from cookie sheet.

NOTES:

You can make this recipe with almond butter, sun butter, cashew butter, etc.  Feel free to experiment!
